    For the last few years, coconut water has been growing in popularity, marketed as an all-natural, thirst-quencher containing the electrolytes that can be lost lost through intense physical activity.

    But there has also been an explosion of interest in coconut, with an increasing number of products such as non-dairy coconut milk ice creams, “healthy fat” coconut oil spreads, diabetic-friendly coconut sugars, gluten-free coconut flour and crispy dried or baked coconut snack chips. Turns out that many coconut foods are not only nutritious, but have a place in many selective diets ranging from gluten-free and non-dairy, to low-glycemic for diabetics to animal-products-free vegan to Paleo, which shuns dairy, refined sugars and processed foods among others.
